Gayle’s Gorgeous Coconut Cake

This cake is a firm favourite in the Forever Manchester offices and will make enough to bake 2 x 1lb tin loaves.

What you’ll need

For the cake:

    >8 oz of soft butter
  • 8 oz of self raising flour
  • 8 oz of caster sugar
  • 4 eggs
  • 4 oz of desiccated coconut (or to taste)


  • Mixing bowl
  • Wooden spoon
  • Deep cake tin for a loaf style cake or shallow baking tray for squares
  • Grease proof paper

How to bake Gayle’s Gorgeous Coconut Cake

  1. Pre-heat oven to 190C or gas mark 5
  2. Cream together the butter and sugar
  3. Beat in the eggs 1 at a time (don’t worry if it starts to separate!)
  4. Add a spoon full of the flour and beat in
  5. Fold in the flour
  6. Fold in the coconut
  7. Line the cake tin with grease proof paper and spread the mixture evenly. Place on top shelf of a pre heated oven, leave for 15/20 mins until firm to touch (check the middle of the cake to make sure it is cooked thoroughly)
  8. Serve cold, or warm with a scoop of vanilla ice-cream
