Surprise Lemon Cake

What you’ll need

For the cake

  • 4oz soft margarine
  • 6oz self-raising flour
  • 6oz caster sugar
  • 2 eggs
  • 1 tsp baking powder
  • 4 tbsp milk
  • Finely grated rind of 1 lemon

For the topping

  • 4oz caster sugar
  • Juice of 1 lemon

How to bake

Pre-heat oven to 180C / Gas mark 4

Line a 2lb loaf tin

Mix all the cake ingredients together

Spoon into the loaf tin and bake for 50 – 60 minutes.

Remove the cake from the oven and allow to cool slightly.

Spoon the topping mixture over the cake whilst still warm.

Once the cake has fully cooled, remove from the tin.
