Celebrity chef Simon Rimmer has given his support to Caketober by talking us through his favourite recipe.
Simon invited us to his acclaimed Hale restaurant Earle and treated us to a magnificent double chocolate cheesecake, which was as delicious and indulgent as you would expect.
The Sunday Brunch star hopes his creation will “encourage people all over Manchester to break out their mixing bowls and cake tins and venture into the kitchen.”
“Forever Manchester is a charity we should all be proud of and Caketober is a perfect excuse to raise lots of money for a fantastic cause, while eating cake – what’s not to love? I’ll be watching Twitter for successful cheesecake pictures,” he added.
Simon’s cheesecake recipe is incredibly simple, and once the bourbon biscuit base and rich chocolate centre are safely in the tin the delectable dessert takes just an hour to bake. We can confirm the results are most certainly worth the effort!

We’ve seen a fantastic response so far, and there is still plenty of time for you to dazzle us with your own Caketober event. Many of you have already held successful cake sales in offices throughout the city, and we want to see even more.
Whether you try Simon’s recipe or come up with your own ideas, the important thing is to raise as much money as we can for Forever Manchester. The charity does so much for our city, and with an ultimate target of £50 million to hit there is still plenty of work to be done.
With Halloween coming up, this is a great opportunity for you to cook up some creepy cupcakes or spooky sponges to impress your friends and colleagues.
